The fifth annual Jazz Summit Jam @ 129 1/2. All the players that have been in town all weekend participating in the summit will be on hand to sit in for one final jam with local musicians before heading back home.

Dinner starts at 4 -Music @ 6 - Jam @ 6:30.

Havin' a great Sunday - great Soup too

OK -
This may very well be my oddly favorite soup ever. I'm not certain if it is because of the flavor - or the surprising flavor despite the ingredients.

Kierland Stew
- Ham and Potato with Cabbage (sounds simple enough huh?)

OK -the only issue here is that I made a Pork Stock, and used that for the base of the soup. You should be able to use a nice Vegetable base, but don't make it too strong, or salty, as the ham will carry that.

In a large sauce pan - heat 1 gallon stock (pork or vegetable, but not chicken) to a rolling boil.

Next, add 1 1/2 # medium diced Potatoes. I suggest Red Bliss as the tend to stay firmer a little longer.

1# Diced Ham - use a deli type if you like, or scraps from a bone in

2 t Nutmeg (you know I love this stuff, and this is the perfect application)

2 T Fresh Parsley

3 C Shredded Cabbage

1 t Fennel Seeds, or if you have it, 1/4 C thinnly sliced Fennel Bulb

Bring it all to a nice boil, and then simmer for about 20 minutes until the flavors blend

- Really nice and simple - great flavors

Pork Stock:

I also use this for the base to my posole - nice subtle flavors, not as distinct and strong as Chicken or Vegetable

In a Medium Sized Stock Pot:

1 Gallon Water
1 C Chopped Red Onion
1 t S/P
1/2 Cup Parsley
1 C Orange Juice
2 T Chopped Garlic
1/4 C Cilantro
1/2 # Pork Cushion - you can add this to the soup if ya want, but I'd prefer making little carnitas out of it
- bring it all to a boil and let it reduce and simmer to about 3/4

Great brownie Recipe ... more texture than Chocolate

These are great ... but you don't wanna eat a ton of them. Almost like an old fashioned molasses (sp?) brownie ... my grandma used to make something very similar to this ... great for a cold stay at home project to pass the time:

3 C Sugar (yeah, three)
6 T Cocoa Powder
1 C Melted Butter

6 Beaten Eggs
2 t Vanilla

2 1/4 C Flour
1 1/2 t Salt
1 t Baking Powder

Combine: Melted Butter, Cocoa, Sugar and Vanilla - just use a spoon - mixer if ya wanna

Add: Eggs to mixture

Next add: Flour, Salt and Baking Powder

Cook in a buttered and floured 18 x 12 pan - 375 for 20 minutes

Sides will get a little bubbly, and the center will sink just a bit, but when it cools - really nice texture.

I driizzled White and Dark Chocolate on mine - worked out well. Enjoy! Not gooey - but really abd for ya - which means ... tastey!

This is day Three of the "storm" - and yes, that is Simon outside with PJs - he was helping unload the van this morning - he had boots on - and it wasn't as cold as it looked - for a few minutes anyway.

(Oh yeah, this is not my favorite sign - one you should most likely heed)

Opened up the hill in front of The Elks, they've actually done a great job of keeping the roads pretty clear - don't wanna know what that might have cost.

Looking forward to a Saturday with a little less weather, and more customers - hopefully the "I wanna see snow" crowd from Phoenix will fill the place - we all know that true Preskitonians stay home in any sort of weather.

If you are at home, I'm posting a great old fashioned brownie recipe I found the other day in just a little bit. I drizzled mine with White and Dark Chocolate - called 'em Messy Brownies ...

Storm Results - The Flood ... almost

What a mess, but we got through it so far! Gato survived the impending Granite Creek. The creek crested sometime over night and is now back a near normal levels. This, after we took all the patio furniture in etc.

Lots of excitement yesterday. Spent most of the day bailing out Monk's, climbing on the roof to clear gutters (not ours), and knee deep in freezing water - I have some pics which I'll post later.

The day started really great - I got up at 4am to fill the pastry case at Monk's and make desserts for 129 1/2 and Gato - only to have very few diners - then the rain startedin earnest ... then the roof started leaking, then the courtyard filled up and began to come in the back doors at Monk's - not a pretty sight! Took all day and night to get it under control.

With the weather cooling the water has stopped, but now at least we are prepped and ready for the deluge once it decides to start melting again.

Hope all are safe, warm and dry! By the way ... we're open if you wanna stop on in for a warm cup O' Joe and vittles!

Butternut Squash and Carrot Soup

Ready to start the week fresh! Got some cool stuff planned for this week. New dishes at 129 1/2 - Cowboy Surf & Turf, Cornmeal Catfish, and a great Spinach Fettucine and Smoked Salmon Dish - sounds comfy no?

Gato - Soup Sunday was a hit - all Vegan Soups this week - here is a great simple recipe that was by all means my favorite:

Butternut Squash & Carrot Bisque
1 medium sized Butternut Squash, peeled, seeded and rough chopped
6 nice size carrots - peeled and rough chopped

- Saute in Olive Oil for about 6 - 8 minutes until the begin to soften with a dash fo Salt & Pepper

- Once Softened, dust with 1/4 C Flour and create a roux

Season with 1T Chinese Five Spice (I actually rarely use this, but it worked great here)

Add 1 qrt Vegetable Stock, and 1 can Coconut Milk

Simmer for about 15 mintues, and puree, or leave it nice and chunky - kind of a hearty winter soup

You can also sub the Chinese Five Spice with Curry, or Nutmeg, Cumin and a dash of Cloves

- Enjoy!

Hope everyone is enjoying this great weather we have been having as late - even the rain was a nice surprise.

This weekend its Bill West with Matt Jackson and Brain Sinclair on Friday 6:30 - 9:30, and then on Saturday, it's the return of Frankie and Rosemary to their regualr spot. Joining them will be Brian Sinclair and Ramon Dana - how about that for a line up? Roman returns on his own on Sunday - shoudl be great as always!

Favorite Recipe this week:

Since you are all gonna have yoru grills out this weekend - how about making some grat Grilled Salsa?

Roasted Salsa
(10) Roma Tomatoes
- just grill 'em until they get charred on all sides, but don't over do it
(2) Jalapenos
- Grill these also. Its up to you if you wanna take the seeds out first or after grilling
(3) Scallions - small dice
(1) Green Bell Pepper
- Don't grill this one
(1) Red Onion - fine dice, no grilling
1/4 Cup Chopped Cilantro
(I really like to leave this one a bit rougher chop then the rest of the stuff)

Place the Tomatoes and Jalepenos in a Food Processor and pulse lightly until still chunky, but smooth

Place everything in a stainless steall bowl and add the following:

1/2 C Franks Red Hot, or your favorite hot sauce
PInch Kosher Salt and Pepper to taste
2t Chili Powder
1t Cayenne

Chill it really well - and enjoy it with Tortilla Chips, or tossed in a salad with Ranch Dressing

Lunch this Week 4-11-09 - Seafood Week!

MMMMMmmmmm good is all I can say about the lunch features this week.

My new favorite is one that I did a few years ago, and decided to bring back for a stint to see how it goes this time around.

Seared Ahi Tuna Burger
Sahsimi Grade Ahi Tuna mixed with Capers, Parsley, Cilantro, Onions and roasted Bell Peppers - Griddle Cooked, and served on a Toasted Kaiser with a Citrus Aioli - MMMmmm

Now - here is how you can make it at home:
1 # Fresh Ahi Tuna
(you can use albacore, but the burger will be a bit stronger flavor,

you reallly want to keep this as lite as possible)

Cut into large pieces and pulse in Food Processor until the texture of ground beef

-but not purreed

Now in a Stainless Steel Bowl, combine

1/4 C Diced Red or Yellow Onion (fine dice)
1/4 C Diced Roasted Red Bell Peppers
Salt and Pepper
Zest of (1) Lemon and (1) Lime
1 T Chopped Capers
1 T Dijon Mustard
1/2 T Chopped Parsley
1/2 T Chopped Cilantro (optional)

Combine all together and form into 4 - 5 oz patties
You could cook on a chargrill if you like, but I foundthat the texture and flavor is lighter and more distant on a flat top grill or fry pan.

Served with Pickled Ginger, Citrus Mayo, or other light condiment.

Other things to consider would be addinga bit of Sesame Oil to the mixture - again, i jstu liked it nice and fresh tasting without getting too heavy.

The weekend has a lot going on as always - and were all gonna be watching the game at 129 1/2 - and startingt he day with a great Soup Sunday at El Gato Azul.

Tonight it's the return of Ed Cornett at 129 1/2 along wiht Steve Sandner and Brian Sinclair on Satnd up Bass - always a great night. And then on Saturday, for the the pre pre game party - it's Rosemary, Frankie, Tom & Jack for a night great tunes, great food and good times!

So have a great weekend, and stop on by if your downtown. And oh yeah ... I'll de doing a cooking segment on AM Arizona with Tonay Mock and Lou Reese Monday the 2nd - post super bowl. - Check it out if you're around.

I gotta let you know, Frankie and Rosemary have been a huge hit at the club on Saturday nights. So much so, that I've booked them through the end of March - if you haven't been in ... and want a great way to end the weekend, and forget about the week - don't miss 'em!

Also - Matt Jackson, Carlos B Jones and Steven Ayres were in on Sunday and sounded great. Really a nice different sound. These guys used to play when we first opened, but if you haven't heard them recently, make a point of catching them this month. If not here, one of their other gigs around town.

The weekend ...

What a great, and interesting weekend. I spent quite a bit of time surfing the web and checking out some other local Prescott blogs - there is really some great and interesting stuff out there. Alot of it funny and thought provoking too.

I started to wonder where they get the time to do those things, and why...

But anyhoo ... great weekend at 129 1/2 - just got in a bit ago, and have to admit that Rosemary and Frankie Chavez, along with Jack Petersen and Scottich Brian were way too much fun! Jack and Brian have this great chemistry where they just egg each other on - everyone loved it and stayed through an extra set. They are gonna be back every Saturday through March - but if you come in to hear 'em

- don't leave before the final set so you can hear "On Broadway" - tons of fun.

Tomorrow it's soup sunday at El Gato - Dinner at 129 1/2 with The Jackson Jones Trio - what a great way to spend your Sunday afternoon. Soup ... then a lite dinner and upbeat Jazz

Almost through January ... and hangin' in there!

For the last several days we have been without a coffee maker in our house - not a good way to start the day. Anyway ... after being forced to buy my morning cup of Joe at various places, or going without ... I have to admit Rich's brew from Prescott Coffee Roasters has to be the best cup in town. I generally go for the Double Muddy Chai (Chai tea and a double shot of expresso). We also serve his roasts at both restaurants. So ... If your coffee maker breaks, and were not open .. Head down to Prescott Coffee Roasters on Gurley Street - you'll be glad you did!

This was the 8th year for the Taste of Prescott which brings together 22 restaurants to support the Yavapai Food Bank. We, and several other stores there have been there since the beginning, and this year was the biggest turn out yet. (And it didn't rain until the very end)

El Gato did Green Chile Pork Tacos and Ceviche Cups, whiel 129 1/2 did Beef Satay with Peanut Sauce and Apple & Fig Butter Bruschetta - I think we were a hit.

Thanks to Joseph for coordinating the food and Sarah, Nick, Abby, Pamela, Jacob and Audrey for hanging out all day to serve everyone. Audrey and Jacob were the official photgraphers of our group...

Not quite the fair I recall growing up - but we all had a good afternoon. Hannah proved the daredevil by going on most any ride she culd that involved speed and being suspended upside down (I didn't care for that one too much).

Farmers Market Bread Salad

I had a couple of requests to put this up here after making it at the Farmers Market this week.

The real secret is the Multi Grain Bread from Prescott College's Crossroads Cafe

1 Loaf Bread - cubed and seared in Olive Oil
1/2 Cup Roasted Garlic
1/4 Cup Roasted Garlic Olive Oil
4 Roma Tomatoes - fine uniform dice
2 T Fresh Herb Mixture
- Rosemary, Basil and Oregano
Salt and Pepper to Taste

Toss it all together right before service - you'll luv it
- Enjoy!

Due to staffing situations, this morning, I didn't make it to the farmers market with Jacob to do the cooking demo.

I heard there were a few of you who went looking for us when I went to pick up our produce later in the afternoon - Sorry, but thanks for comin' out. I've got two more days there, Sept 6th I think, and one in October - we'll be there then.

Looking forward to the Summit events tonight at Ruth Street, and tomorrow at the Elks. Serveral of the musicians have been at El Gato for lunch, and were looking forward to the Final Jam tomorrow evening - hope to see ya there!

Mick's Drink of the Week

Tropical Margatini
- From Mick at Action Wine & Spirits

2 oz 30/30 Tequilla Reposado
1 oz Orange Brandy Liquor
Splash Sweet n' Sour
Splash Lime juice

Fill cocktail shaker halfway with ice
Add frozen Watermelon & Fresh Orange slices to fill.
Shake vigoursly
Strain into a Sugar Rimmed martini glass,
Garnish with a Watermelon cube In the bottom of the glass.

- OK, the watermelon cubes are nice, but you can skip 'em if you want. If you wanna try to get a bit of the watermelon flavor without the hassle - World Market has a Watermelon Concentrate that is great in warm weather cocktails.

- Try this out at 129 1/2, its similar to our Southern Orange, but with a slight twist.

Luau For Little Ones

Here are some shots form the Luau for Little Ones which is a fundraiser for Prevent Child Abuse. The event is held every year at Watson Lake, and for the last several years, El Gato has donated the appetizer course.

Kim and Eric Gardner, along with daughters Sarah and Kayla have donated for their time and talents to the task for the last few years, and we definately could not do it with out them!

This is one of my favorite salad dressings ever. I was gonna do the Market Martini Recipe, but decided to save that until next week.

This is a great over sliced tomatoes, or most anything you're gonna find at the market today. - Enjoy!

Farmes Market Vinaigrette
3 C Vegetable Oil
1 C Cider Vinegar
2 T Mixed Chopped Herbs
-sage, rosemary, thyme, oregano and parsley
½ Finely Diced Red Onion
4 T Dijon & Whole Grain Mustard
¼ C Balsamic Vinegar
1 t Salt
½ C Sugar
Whisk Oil and Vinegar, adding ingredients once emulsified

This is pretty simple, but you need to get the oil and vinegar really emulsified. One of the easiest ways to do this is in a food processor, Vinegar, Herbs, Mustard and Sugar - then add the Vinegar in a slow stream. Finish with all you remaining ingredients.

Farmers Market Finds - Ya gotta luv it!

(Cory from Whipstone, one of the nicest guys you may ever get the chance of meeting.)

Some shots of the farmers market that takes place at Yavapai College every Saturday. The tomatoes from Chino farm are excellent - and Cory with Whipstone always has a nice assortment of stuff. The carrots and beans this week were really sweet, and moist.

Also, Molly Beverly with Prescott College's Crossroads cafe, is now on hand every week with some incredible rustic breads. The Spanikopita (sp?) is great, and makes a great addition to the salads and Market Martinis we make at El Gato.

I can't believe it is August! The summer has just flown by, and the kids are back in school on Monday.

We got a lot going on, and alot has happened this summer. 129 1/2 is on a Seven Day Schedule for the first time ever - and El Gato is just cruising by.

Even though I did basically nothing, I really enjoyed the summer. The Pajama Game wrapped up in mid June- 41st birthday right after that. Did some great changes that I really like at both Gato and 129 1/2 - and looking forward to the fall.

Wednesday, Jack, Tom and Steve are back - The Hot Club. These guys are my favorites, the groups plays Classic French and Traditional American Jazz - nice and mellow - great dinner music. Guitar, Bass & Mandolin. Starts at 6:30.

Thursday the 17th - Dave Russel is in for the first time with his own Trio - Sax, Bass Flute and more - incredible!

Friday and Saturday, its our first ever Folk Session Weekend with Don & Jan Cheek, on Friday the 18th, and Susan Kelly and Mike Lewis on Saturday evening. Both start at 6:30 - should be great. They both perform at El Gato during the Summer months, and we all love them. Nice change of pace for the Grille.
